Bread dough (this is also a great dinner roll recipe)
6 cups flour ( 2 cups white, 2 cups soft white wheat flour, 2 cups oat flour, spelt flour or kamut flour) I even do a blend of all three of these flours
1 ¾ tablespoon yeast
¾ tablespoon salt
¼ cup honey
¼ butter
1 egg
½ cup milk
Mix dry ingredients
combine all liquids in sauce pan, including eggs, heat to 105˚-115˚, (I usually stop at 110˚)
Add yeast to the liquid and let rise for 10 minutes
Mix dry ingredients
Mix wet and dry ingredients.
Kneed for 5-10 minutes
Let rise till double in size (around 45 minutes)
Pouch down and divide in half.
Roll dough out as thin as you can and fill with filling
Roll up and use dental floss to cut.
Place on cookie sheet or cake pan to rise for 45 minutes or double in size
Filling
2- 8 oz cream cheese softened
3/4 cup butter softened
1 cups maple syrup
1 1/2 TBS cinnamon
1 TBS Vanilla
Mix in kitchen aid for 5-10 minutes, there will be chunks and it is ok.
Spread over rolled out dough
Roll up and cut with dental floss approximately 16 rolls for half the dough.
Bake in 400˚ oven for 5 minutes drop temp to 325˚ for 12-15 minutes
Let cool then put topping on

Maple Frosting
2 cup Heavy Whipping Cream (whipped until soft peaks)- Meadow Gold is a healthier brand to buy.
Cream the below ingredients together
8 oz Cream Cheese softened- Costco has a healthy brand without sugar
1 cup Pure Maple Syrup
1 tsp Vanilla
Fold cream cheese mixture into heavy whipping cream.
Start will less whip topping until you have the desired sweetness
Approximately 32 rolls
